Caviar is salt cured fish roe (eggs). Traditionally, caviar referred to only to roe from wild sturgeon in the Caspian and Black Sea (Beluga, Ossetra and Sevruga caviars).  The term is often used to describe is used to describe the roe of salmon, lumpfish, trout, whitefish, and others.

According the to the Convention on International Trade in Endangered Species of Wild Fauna and Flora,he United States Customs Service, roe from any other fish is classified  "substitutes of caviar." This includes non-roe "substitutes of caviar such as eggplant caviar and  "Texas caviar" (made with black-eyed peas).
