The measurement for julienne is ⅛ x ⅛ x 1 to 2 in (3 mm x 3 mm x 3 to 5 cm). While term "Julienne" is often applied to vegetables (e.g., potatoes, carrots, celery), it can also be applied to meats and fish cut for use in stir fry.
