Seeing pastrami on the list made me wonder about its origin. According to Wikipedia, pastrami was originally created as a way to preserve meat before modern refrigeration. It is usually made from beef, pork, mutton or turkey.The raw meat is brined, partially dried, seasoned with various herbs and spices, then smoked and steamed. Growing up, a pastrami sandwich was a treat that we enjoyed at a local restaurant. In recent years, I have enjoyed turkey pastrami sandwiches.
