Food holidays for the week of 2 March

Whether March enters like a lamb or a lion, this week's line up of holidays will spring you into your March food festivities!

Absinthe, is a high alcohol spirit. According to Wikipedia, absinthe is " an anise-flavored spirit derived from botanicals, including the flowers and leaves of Artemisia absinthium ("grand wormwood"), together with green anise, sweet fennel, and other medicinal and culinary herbs. Absinthe traditionally has a natural green colour but may also be colourless. It is commonly referred to in historical literature as "la fée verte" (the green fairy)".  My recollections of Absinthe were from reading books in which Absinthe was described as an addictive, hallucogenic drug and that at one point in time it Absinthe production and distribution banned in several countries, including the United States. he Absinthe production and distribution resumed in the 1990s after research found the Absunthe's properties to be similar to other spirits.In the past year I visited The Columbia Room, a cocktail bar in Washington, DC, where the bartender introduced me to green Absinthe  and yellow Absinthe. The Columbia Room is now closed, but I'm grateful for the education about Absinthe. I hope to add  Absinthe to my bar one day.
